Red wine spaghetti with broccoli


My version of red wine spaghetti. Here you have a good portion of carbohydrates you need during winter. It's because your metabolism speeds up to keep the warmth at optimal level. You need energy. You need pasta. 

It's good for you.


The recipe:

Let's get started from preparing the sauce. Yey, one of my favourite. Bagna cauda. Or something like that ;)

ingredients:
some anchovy fillets
one garlic clove
lemon juice
dried chilli pepper flakes
pepper
olive oil 

Heat a tablespoon of olive oil in a sauce pan. Crush the garlic with a knife and throw on the olive oil. Fry a while. Add the anchovies and fry until they start to crumble. Then mix them, add lemon juice     and olive oil to turn it into sauce coinsistence. Taste. Add spices.

*tip: you can add cream to make it more smooth and mild in taste


Pasta:

ingredients:
spaghetti (whole grain, I used the one with oat fibre)
red wine (I used dry)
water
pinch of salt

To make the purple spaghetti, you have to cook it al dente in water and red wine (in proportion like 1:1) with a pinch of salt.

In the meantime prepare the broccoli. Cut them into small stems. Sprinkle with spices and olive oil, then grill them or roast in the oven.

Mix the pasta, sauce and broccoli all together. Serve with grated grana padano  or pecorino cheese.
