Cheesy spinach soup





Spinach.
Cheese.

One of my favourite soups.

Hi there ! I've done recently this super creamy fish soup. Yes, there is a smoked fish inside. It's a smoked whitefish (in Poland called 'sielawa'). I added it to the broth to enrich the taste, I think it really suits to cheese. I used low fat camembert, grana padano and some salty goat cheese. Yummy. 

Ingredients:

500 ml of broth (add some smoked fish to it. That can be codfish, whitefish or diffrent)
200 g fresh spinach leaves (or more)
1 low fat herbed camembert, sliced
20 g grana padano (or more), grated
a few slices salty goat cheese (I gave about 100g)
2 onions, chopped
some olive oil
3 whitefish (mine were small, so you can use less or more)
2 cups milk
2 cloves garlic
some spices: salt, pepper, thyme, basil, bay leaf, allspice (to taste)

First, heat a tablespoon of olive oil with crushed garlic cloves in a quite big pot. Add the onions and fry for a while. Throw into spinach leaves and sautè them. After a few minutes, pour the broth, milk, throw into the cheeses and spices. Cook it for about 30 minutes and try. Add some fish (I mean filets, without fishbones). Cook for the next couple of minutes. Serve with fresh parsley and croutons with garlic butter or fresh homemade pesto.

Hummingbird bread


Banana.
Pineapple.
Dates.
Creamy home-made  hazelnut chocolate creme.
Cup of hot chocolate. Or matcha tea.
That's the perfect breakfast.

Hey ! Christmas is coming as we can see in our shops or tv, but I must admitt I haven't felt them yet. No snow, no cold. Well, the forecast promising. We'll see. I'm going to ski a lot this winter ! 

So guys, as in the 'Game of Thrones' :
"Winter is coming"

Oh, I forgot sth. The recipe:

Ingredients:
2 cups mashed ripe bananas
1 cup pineapple juice (I mixed fresh pineapple in blender) or pineapple smoothie
a few dates (I think I gave 5) finely chopped
1 egg
1 cup oat flour
1 cup millet flour
a handful of finely chopped nuts (eg. pecans, walnuts, hazelnuts or almonds, I gave some walnuts and almonds)
1 tablespoon soda
a pinch of salt
2 tablespoons vanilla extract
1 tablespoon cinammon
2 tablespoons flaxseed
50 ml coconut oil 
50 ml maple syrup 

Good. When we have all the ingredients prepared, let's mix liquid coconut oil, maple syrup and egg. Heat a little if needed. It should be a liquid. Add the bananas and pineapple and mix. Then mix the  all dry ingredients. Then mix everything all together. Put the dough to a form. Bake in 180 Celcius degrees for about an hour.

Autumn nut roast


Well, autumn. I have for you a recipe for a nut roast. My inspiration was a recipe from Hemsley sisters' cookbook. Perfect with frankfurter Grune sobe made from local fresh herbs or cheese sauce but the green sauce from zucchini noodels also works :) I think this has perfect taste harmony. It's rich in strong walnut and aromatic thyme mushrooms taste while the dried peaches and chesnuts make it not so heavy and intensive. And everything is connected by quinoa which make the smooth coinsistence of that dish. You will enjoy. I promise. 
PS. Of course if you aren't allergic to nuts  :)

The recipe:

Ingredients:

1st layer:
25 g butter, clarified
2 small onions, finely chopped
100 g dried apricots, chopped
200 g chesnuts (boiled, peeled and chopped)
10 sage leaves, chopped
salt and pepper to taste 

Heat the butter in a pan, add chopped onions. After few minutes throw into the apricots, chesnuts and sage. Cook it for about 5 minutes or more, mixing from time. Add some salt and pepper to taste.
Put the baking paper into the form. Then put the sticky mass from the pan to the bottom of the form. 

2nd layer:
50 ml lemon juice
1 teaspoon butter
2 large onions, finely chopped
some thyme, fresh or dried
500 g mushrooms, grated
200 g quinoa
100 ml red wine 
100 g walnuts, finely chopped
70 g brazilian nuts or pine nuts, finely chopped
100 g almond flour
a handful of fresh parsley, chopped
1 egg 
salt and pepper to taste
a clove of garlic


Heat some butter in a pan. Add some onions and cook for few minutes. Then add quinoa. Mix. Add mushrooms, lemon juice, wine, thyme and garlic. Cook for about 10 minutes or longer to reduce the liquid. Then throw into the nuts, parsley, salt and pepper. Mix. When the mixture cool a little, add an egg. Mix and then pour the mass into the form. 

Bake it in the oven for about an hour in 160 Celcius degrees.

Zucchini noodels with bean balls



Today I was in a little hurry so I have for you a recipe for a quick green meal.
It's fast if you have that brown balls. No, it's not meat :) I made them a few days ahead. Well not only me, I can say now that I've got that kind of sister who likes me a little bit and helps sometimes when it comes to cooking ;) She's 11 and likes vegetables so much (!) Today she wanted      to cook spaghetti noodels without water, but made the sauce herself. 

Yeah, so funny. The Recipe :


Ingredients:

Zucchini noodels (I made a kind of pappardelle)
Avocado
Some olives (I used the anchovy fillets stuffed ones)

Sauce :
About a handful of parmesan + pecorino 
brazil nuts (a handful)
almonds (a handful)
garlic
pepper
salt
basil
3 tablespoons olive oil
About 100 g kale 

Blend well all the ingredients. Now you've got kale pesto. Then add pelled avocado and 100 ml water. Blend again. That's the sauce :) Add more water if needed. Taste it. Yummy. 
That's the essence of green kitchen.

The balls (I made 20 small balls)
one cup buckwheat
one can black beans (dranied from the liquid)
1 shallot (finely chopped)
4 tablespoons pumpkin seeds
2 tablespoons linseed
3 tablespoons flour (I used buckwheat flour, but all kinds will be fine) 
2 tablespoons olive oil it coconut oil
3 tablespoons fresh finely chopped chive
a few broccoli stems
Salt
Pepper
Smoked paprika
Cumin 
Corrianer seeds
Some fresh herbs

Put all the ingredients into a blender. Blend well. Add some spices to taste. 
Then form balls in your hands. If the mass will be sticking to your hands, I recommend you to wet your hands with some water. 
If formed, you can grill or fry them. 


Oh right. 
Now, heat the sauce in a wok or sauce pan, put the noodels into. Cook for a few minutes. If ready, put it on a plate with some bean balls and olives.

Tahini pear cake with almonds and chocolate frosting

First post. What can I write ? 
It's autumn. Sooo sad outside. Just wind and rain. All the time. 

I'm sitting in big cosy armchair near the fireplace watching Star Wars (no I'm not a mad fan, it's just marathon on axn).
It's the Independence Day of Poland today so everybody have a day off. You know, we don't celebrate it like in other countries. Actually, we don't celebrate it at all. Just a day off. OK.

Well, time for the recipe:



Ingredients:

300 g tahini 
250 g honey
1 tablespoon soda
220 flour (can be rice flour or millet flour, I prefer the millet flour, it's healthier because contain more protein)
1 tablespoon cinamon
1 tablespoon vanilla extract
100g almond flakes
200 g pears (cut into slices or cubes)
250 ml apple juice
a small handful of whole almonds

Preheat the oven to 160 C degrees. Blend tahini and honey. Taste it. It's gorgeous. Than add soda, flour, cinnamon and apple juice. Blend well. Throw in the pears and almond flakes and mix carefully. Pour the mass into a form.
Sprinkle with some almonds. 
Bake the cake for about an hour (or more).

I made the chocolate frosting from home made hazelnut chocolate cream and soy milk, but I think caramel sauce also would be a good idea. Try to experiment.

Hi guys !



I'm Anna and I've just started writing my first blog about food.

I'm 19 and I've got a gap year now (I want to study medicine next year)

My friends are biology and chemistry :) yeah, I'm a nerd.

Why blogging ?

Firstly, I love cooking, eating, tasting etc.
Secondly, I've always wanted to share my recipes and ideas with people. 
Thirdly, I just want to provide the recipes from being forgotten.


I believe that we are what we eat - the food affects on our body and mind, it gives power to our body so that I'm trying to cook healthy and nutricious meals.
