Sweet almond horseshoes

Almonds.
Chocolate.
Germany.

In Germany these sweets are called "mandelhörnchen". I ate them in Frankfurt and they tasted so good that I decided to make them at home. Mine look diffrent from the traditional, but I tried to turn them into a healthy snack ;)

Home-made marzipan:
100g dates
200 g almond flour
2 tablespoons (or more) rum or amaretto

Blend well all the ingrendients to a paste.

Horseshoes:

marzipan about (300 g)
200 g almond flour
200 g almond flakes
3 egg whites
100 g xylitol powdered (or sugar)
some vanilla if you want

200 g dark chocolate couverture

Mix almond flour, 100 g almond flakes, 2 egg whites and xylitol or sugar into a sticky dough.
Form horsechoe shapes on a baking sheet. Cover them with an egg white and sprinkle with the rest almond flakes. Tighten to stick them to the mass.

Bake in 180 Celcius degrees for 15 min (no longer).

As they cool, cover with a chocolate couverture.

Enjoy!

PS. Here you have the original ones from Frankfurt:

Cheese stuffed mushrooms

Simple.
Green.
Winter cheesy dinner.

Hi guys ! That was my dinner today. Mushrooms stuffed with some cheese, roasted broccoli and kale salad was all I needed today after whole day spent on writing chemical reactions ;)
Some energy for tired brain.

Start from the mushrooms stuffing:
Ricotta
Grana padano
Pecorino
Low fat camembert
Fresh herbs: parsley, thyme, oregano, basil
Salt
Pepper

Hack the herbs. Mix all kind of cheese in proportion as you like. Try to experiment.
Stuff the mushrooms.

To prepare the broccolis:
Cut the broccoli into stems, spice with some salt, pepper and smoked paprika. Put them on a baking sheet and roast in oven for 20 min in 180 Celcius degrees.
You can roast the mushrooms in the same time or grill them in aluminium foil for about 30 min.

Meanwhile prepare the salad from:
Avocado
Kale
Broccoli sprousts
Kiwi, sliced
Dressing: mustard, honey, pesto, olive oil

In the end, make cheese sauce:
Ingredients:
Corn flour
Butter, clarified
Cheese eg. Gorgonzola, goat cheese, parmesan
Milk (I used soy milk)
Thyme
Pepper

Heat the butter in a sauce pan and add the corn flour, fry for a while until it smells like popcorn. Stir into milk. Throw the cheese. Mix. Add spices. Cook until
getting the sauce coinsistence.

Put everything on a plate.
Enjoy.

Almond cheesecake bites

Snow, where are you ?

Yes, we're completely out of snow.
Yes, it's global warming.
Yes, we have a problem.
A global problem.
Be aware.

Ok, time for the recipe:

Ingredients:
250 g cottage cheese or ricotta
4 egg yolks
4 egg whites
50 ml + 3 tablespoons xylitol (or sugar)
50 ml honey
70 g butter
2 tablespoons amaretto
2 tablespoons orange liqueur
100 g almond flour
50 g almond flakes
50 g candied orange peel (or less), finely chopped

Mix the butter and xylitol to a bright yellow mass. Add egg yolks and mix again for a few minutes. Add cheese and honey. Mix. Then throw into the orange peel, almond flour, almond flakes and enrich the taste by adding amaretto and orange liqueur. Mix the mass well, but not too long. In a separate bowl mix egg whites with 3 tablespoons of xylitol - like making a meringue. Add the whites to the mass and carefully mix it with spatula.
Bake in a form in 180 Celcius degrees for  about 30 to 40 minutes.
The best are still warm with some white chocolate frosting... Yummy.

Red wine spaghetti with broccoli

My version of red wine spaghetti. Here you have a good portion of carbohydrates you need during winter. It's because your metabolism speeds up to keep the warmth at optimal level. You need energy. You need pasta.

It's good for you.

The recipe:

Let's get started from preparing the sauce. Yey, one of my favourite. Bagna cauda. Or something like that ;)

ingredients:
some anchovy fillets
one garlic clove
lemon juice
dried chilli pepper flakes
pepper
olive oil

Heat a tablespoon of olive oil in a sauce pan. Crush the garlic with a knife and throw on the olive oil. Fry a while. Add the anchovies and fry until they start to crumble. Then mix them, add lemon juice     and olive oil to turn it into sauce coinsistence. Taste. Add spices.

*tip: you can add cream to make it more smooth and mild in taste

Pasta:

ingredients:
spaghetti (whole grain, I used the one with oat fibre)
red wine (I used dry)
water
pinch of salt

To make the purple spaghetti, you have to cook it al dente in water and red wine (in proportion like 1:1) with a pinch of salt.

In the meantime prepare the broccoli. Cut them into small stems. Sprinkle with spices and olive oil, then grill them or roast in the oven.

Mix the pasta, sauce and broccoli all together. Serve with grated grana padano  or pecorino cheese.

Buon appetit !
