Cheese stuffed mushrooms





Simple. 
Green.
Winter cheesy dinner.

Hi guys ! That was my dinner today. Mushrooms stuffed with some cheese, roasted broccoli and kale salad was all I needed today after whole day spent on writing chemical reactions ;)
Some energy for tired brain. 

Start from the mushrooms stuffing:
Ricotta 
Grana padano
Pecorino
Low fat camembert
Fresh herbs: parsley, thyme, oregano, basil
Salt
Pepper

Hack the herbs. Mix all kind of cheese in proportion as you like. Try to experiment. 
Stuff the mushrooms.

To prepare the broccolis:
Cut the broccoli into stems, spice with some salt, pepper and smoked paprika. Put them on a baking sheet and roast in oven for 20 min in 180 Celcius degrees.
You can roast the mushrooms in the same time or grill them in aluminium foil for about 30 min.

Meanwhile prepare the salad from:
Avocado
Kale
Broccoli sprousts
Kiwi, sliced
Dressing: mustard, honey, pesto, olive oil

In the end, make cheese sauce:
Ingredients:
Corn flour
Butter, clarified 
Cheese eg. Gorgonzola, goat cheese, parmesan
Milk (I used soy milk)
Thyme
Pepper

Heat the butter in a sauce pan and add the corn flour, fry for a while until it smells like popcorn. Stir into milk. Throw the cheese. Mix. Add spices. Cook until 
getting the sauce coinsistence.

Put everything on a plate.
Enjoy.
