Almond cheesecake bites

Snow, where are you ?


Yes, we're completely out of snow. 
Yes, it's global warming.
Yes, we have a problem.
A global problem.
Be aware.

Ok, time for the recipe:

Ingredients:
250 g cottage cheese or ricotta
4 egg yolks
4 egg whites
50 ml + 3 tablespoons xylitol (or sugar)
50 ml honey
70 g butter
2 tablespoons amaretto
2 tablespoons orange liqueur
100 g almond flour
50 g almond flakes
50 g candied orange peel (or less), finely chopped

Mix the butter and xylitol to a bright yellow mass. Add egg yolks and mix again for a few minutes. Add cheese and honey. Mix. Then throw into the orange peel, almond flour, almond flakes and enrich the taste by adding amaretto and orange liqueur. Mix the mass well, but not too long. In a separate bowl mix egg whites with 3 tablespoons of xylitol - like making a meringue. Add the whites to the mass and carefully mix it with spatula.
Bake in a form in 180 Celcius degrees for  about 30 to 40 minutes. 
The best are still warm with some white chocolate frosting... Yummy.
